Taittinger Comtes de Champagne Brut Rosé 2004
A blend of 70% Pinot Noir and 30% Chardonnay that gives rise to a rich rose colour. The bubbles are extraordinarily delicate and form a wonderfully fine necklace of mousse. The nose is refined, fresh and young, revealing subtle and complex aromas of berries gently combining wild strawberries, morello cherries and blackcurrants. In the background blossoms a hint of fresh almonds and liquorice. The initial fruitiness quickly intensifies on the palate. The mid-palate is rich and structured. The generous finish maintains balance and freshness. Still young, but already possessing great class, this has a tannic structure that is becoming rounder and its depth and perfection are still improving.

Louis Roederer Cristal 1999
Cristal was first created in 1876 for Alexander II of Russia, for whom also the highly-recognisable clear 'crystal' bottle was produced, and is viewed by many as the first prestige cuvée. Krug Vintage 1985
Krug: most famous, most sought-after of all the prestigious champagnes? "The nose is waxy, mature and vinous, with notes of fine biscuit, a reserved coffee element, honey and, as many people pointed out, a distinct note of white truffle. This is fabulously expressive, showing a perfectly mature secondary character, with a little orange sweetness at the edge. The palate is just unbelievably good, broad and pure, defined and exciting, vinous with a restrained, gentle mousse. Beautiful flavours complete the picture. This is a joyous wine, so elegantly mature and yet so fresh; there aren't many wines which make me want to laugh out loud through sheer elation, but this is one. Wonderful."
